If you want something appetizing on special occasions, you can try this juicy and crispy pata. Here we use the pig’s front leg boiled until very tender and fried. We need the following:

1 pc of pig’s front leg about 1.5 kgs.cut into 5 parts

2 tsp minced garlic,

2 to 3 tbsps iodized salt,

1/2 tsp ground pepper,

2 pcs bay leaf and

3 strands oregano.

1 tbsp baking soda

1. Clean pig’s front leg. See to it to scrape with a blade those excess hair.

2. In a cooking pot, place the pig’s leg. add minced garlic, iodized salt, ground pepper, baking soda, bay leaf and oregano and enough water to cook the meat. Close the pot and boil until tender.

3. When tender, wrap meat then put inside the chiller or evaporator of your refrigerator until it gets hard.

4. Preheat with enough oil to deep fry . Once the deep fryer is very hot, immediately fry the meat.

5. And it’s done. Ready to serve.

Monalisa bread is delicious when baked properly. It’s a mixture of third class flour and first class flour. It can also be taken with a cup of coffe or a bottle of softdrink or a cup of juice. Here, I will show you how to make a monalisa bread. We need the following ingredients:

800 grams first class flour

200 grams third class flour

180 grams white sugar

10 grams instant yeast

60 grams powdered milk or buttermilk powder

5 grams bread improver

450grams tap water

5 grams vanilla flavor

15 grams iodized salt

20 grams vegetable shortening

40 grams margarine

a pinch of egg yellow food color

100 grams egg( approximately 2 pcs)

Procedure

1. In a mixing bowl, sift three(3) times the first class flour, third class flour, powdered milk, bread improver instant yeast. Sifting allows air to be incorporated in the dough mixture, making it softer.

2. In a separate bowl, pour water, add iodized salt, egg yellow food color, white sugar and vegetable shortening and margarine.Be sure the iodized salt and sugar are properly dissolved.

3. In the flour mixture, make a well in the center and pour the water mixture. With your hands properly washed,mix properly the dough mixture.

4. Knead the dough with your hands on the floured board until dough becomes smooth and elastic. Or you can use a heavy duty cake mixer or a spiral mixer for fast kneading.

5. Allow the dough to rest for 5 to 10 minutes.

6. Form into a long log and divide into 40 grams or depending on the size you want. Round each dough with the palm of your hand and make a slit on top of the dough and put in baking tray (greased with vegetable shortening).

7. If the dough has doubled in size or you can check by poking your finger on the dough. If it leaves a dent, then it is now ready to be baked.

8. Preheat oven to 250 to 300 degrees fahrenheit. Your oven should have the thermometer so you can monitor the temperature.

9. Once this temperature is reached, put the dough inside the oven. Open the oven door after 10 minutes to check if dough turns golden brown. Do not attempt to open oven door 5 minutes after or your dough might collapse.

10. Remove from oven and allow to cool.

11. Now it’s done. You can now it or store it in plastic bag.

Pork sinigang is one filipino recipe that is taken either in breakfast, lunch or dinner. It’s appetizing especially when it is blended with mixture of spices that you would surely love once this is done . You may have other ways to cook your pork sinigang, but you may try this one.

1 kg pork spare ribs chopped depending on size you want (or you can use pork liempo)

salt and pepper to taste

1 pc medium size radish peeled and sliced

1 bundle string beans cut into 1 to 2 inches

1 bundle water spinach (or kangkong ) cut into 3 parts

1 pc taro or gabi peeled and sliced into cubes

few cloves of garlic minced

few cloves or onion minced

2 pcs ripe tomatoes

vegetable oil

note: be sure to clean all vegetables before using

Procedure

1. In a bowl or casserrole,boil the pork until tender but do not forget to add salt when almost tender. This is to have a little bit salty flavor. Set aside.

2., Stir fry gabi or taro in oil, then transfer to bowl.

3. Stir fry kangkong or water spinach until wilted then transfer to bowl.

4. Strir fry radish and okra, then transfer to bowl.

4. Saute garlic until golden brown, saute onion until wilted and tomatoes.then transfer to bowl.

4. Add additional water to the boiled pork if you want to have more soup.

6. .Allow to simmer. Then season with salt, pepper.

Chicken estofado is one filipino recipe where it becomes a favorite meal during fiestas. Without it , the table of food offered to visitors won’t be complete. A friend of mine shared to me this recipe. I tested it in my kitchen and it proved to be satisfying. Again, I am passing this to you who maybe interested in this recipe. Here are the ingredients you need.

1/4 kilo chicken tigh or breast chopped into 5 pieces

1/4 cup catsup

1 piece potato sliced into cubes

4 cloves garlic

1 clove red onion

1/4 tsp ground pepper

1/4 tsp salt

2 tbsps vinegar

1 tbsp soysauce

1 cup water

1 small can of pineapple chunks

Procedure

1. Wash the chicken thorougly , place in a wok

2. Add garlic, onion, ground pepper and salt, vinegar and soy sauce

3. Let it simmer without adding water until cooked. Set aside.

4. Saute garlic until brown, and onion until wilted and add the potato and catsup.

5. Add the cooked chicken. Put 1 cup water.

6. Add small can of pineapple chunks.

7. Let it simmer until potato is tender.

8. Serve.

Black forest cake is mouth watering cake that you cannot resist the first time you try. We have many of these in Red Ribbon bakeshop or Goldilocks in the Philippines. Well, if you try to do it at home, you could save a lot on ingredients plus you enjoy eating this as dessert. A copy of this recipe is shared to my by my auntie. I tried doing it and it’s so satisfying. The more I take a bite, the more slices of this cake I consume. and I am sharing this to you.

Here are the ingredients.

CAKE FLOUR - 500 grams

Sugar -600 grams

Baking Powder-18g

Butter or butter flavored margarine - - —-300 grams

Eggs ——330 grams

vanilla ———–5 grams

Water———-266 grams

Cocoa Powder- 50 grams

Milk powder- 30grams]

Baking Soda 18grams

Procedure

1. Cream butter and sugar using a hand mixer or a cake mixer

2. Add eggs one at a time still using the hand mixer

3.Mix gradually and alternately the remaining dry ingredients, like cake flour,baking powder, cocoa powder, milk powder and bakingsoda with water, and vanilla.

4. When the liquid and dry ingredients are properly mixed, prepare a baking tray with siding greased with vegetable shortening and place a wax paper where we pour the batter.

5. Pour the batter on the prepared tray.

6. Preheat oven to 250 degrees fahrenheit. When you reach this temperature, place the batter inside the oven.

and close oven door.

7. Wait for 20 minutes. Do not attempt to open the oven 5 to 10 minutes otherwise the cake will collapse.

8. Check to see if it’s done by inserting a stick into the cake. If it comes out clean, it means you now have a baked cake.

9. Remove from oven and invert tray. Remove also the wax paper and allow to cool.

10. Apply now th chocolate icing on all surfaces of the cake starting from top down to the sides. Here’s the chocolate icing that you have to prepare before hand.

200 grams all purpose flour

20 grams cocoa powder

1 can condensed milk

chocolate brown color just a dash of it

30 grams vegetable oil

2 tbsps cornstarch

to prepare the chocolate icing

1. In a double boiler. place the all purpose flour, cocoa powder, choco brown color, condensed milk. mix with a spatula. A double boiler has two same bowl with the first one on the bottom filled with water while the second bowl it’s where we put the flour mixture.

2. Place the boiler on top of a gas stove. Continue stirring with a wooden laddle until you would see that the condensed milk is cooked. Here you have to have patience in stirring as it will take time for the condensed to be cooked.

3. Add the vegetable oil and constartch. Be sure to dissolve in a small amount of water the constarch before adding to the mixture.

note: In applying for the chocolate icing,

1. First divide the cake into two. Set aside the cake particles removed while cutting.

2. Apply the icing on the first layer. Put the second layer cake. Apply again the icing.

3. Apply the cake particles all around the the first and second layer.

4. Apply on top of the cake whipping cream and decorate with strawberries.

OR simply.

1. Do not divide the cake. Just simply apply the chocolate icing all around the cake with the use of a spatula.

Brownies are superb mouth watering dessert when properly mixed, blended and baked. An auntie of mine shares her recipe on this and it comes to be very delicious. You may give a hand making this brownie. Here are the ingredients you need.

all purpose flour - 500 grams

brown sugar—– 1000 grams

cocoa powder——-125 grams

eggs—————400 grams ( about 8 pcs)

butter flavored margarine

or butter 400 grams

baking powder 5 grams

baking soda 3 grams

roasted peanuts

You will also need the following utensils/baking equipment

a spatula

weighing scale that can read 2 grams to 500 grams

mixing bowl

hand mixer

oven

Procedure

1. In a mixing bowl , sift three times the all purpose flour, cocoa powder, baking powder , baking soda.

Sifting allows air to be incorporated in the dough so it would becomes airy and soft.

2. In a hand mixer, mix the brown sugar and butter flavored margarine.

3. Add the flour mixture to the sugar mixture . Continue mixing until batter becomes smooth .

4. Place on a greased baking tray with siding or a tray with vegetable shortening with added wax paper so it would be easy to remove the baked brownie later on. Sprinkle roasted peanuts

5. Preheat oven to 250 degress fahrenheit.

6. When you are arrive at this temperature, place the tray inside the oven.

7. Wait for 20 to 25 minutes. Insert a stick on the brownie, and when stick comes out clean , you are sure it is

done.

8. Remove from oven. Invert tray and remove wax paper. Allow brownie to cool.

note; You would notice that I am no longer using the cups and spoons for measuring. They are all weighed in grams so it would be easy for us to compute for the cost of the ingredients. If you go on commercial scale, you have to weigh all your ingredients. So you need a weighing scale. After all , buying those ingredients are in grams.

French fries are usually eaten with a bottle of softdrink or juice drink. Potatoes are sliced in trips, dried and deepfried. These are usually part of daily menu of known fastfood chains like Mc Donald’s, Jollibee, Wendy’s. Well, if you cannot afford to go there, you can make your own home made french fries. You wanna try this. All you need are slices of potatoes, salt and water.

Here’s how.

1. Peel potatoes and soak slices in water with 1 tsp rock salt or iodized salt for an hour. Then drain.

2. Boil water in a casserole. Drop potatoes until half cooked or half done.

3. Preheat oven to 250 degrees fahrenheit. When the thermometer register this temperaturem put inside oven until they get dry.

4. Preheat oil until sizzling hot, then deep fry potatoes until golden brown.

5. Place on paper towel to drain oil.

6. Serve.

Sweet dough bread becomes one of the perfect partners when it comes to snacks while drinking your favorite softdrink. This bread can be filled with any sweet something mix, for example, sweetened red mongo, sweetened coco,etc. Here, I show you how to have a sweet dough bread. Meantime, you prepare the following baking ingredients:]

1000 grams all purpose flour( or first class flour)

10 grams instant yeast

10 grams dough or bread improver

15 grams iodized salt

100 grams egg

180 grams sugar

30 grams powdered milk

40 grams vegetable shortening

30 grams margarine

480 grams water

10 grams vanilla

Procedure

1. In a mixing bowl, sift 3 times the flour, instant yeast, dough improver. Sifting incorporates more air into the flour mixture.

2. In another bowl, beat eggs using a hand mixer or a wire whip until light and fluffy. Add vanilla, water. Dissolve into the water mixture the iodized salt and white granulated sugar and powdered milk

3. Add the liquid mixture (2) to the flour mixture(1). add vegetable shortening and margarine , mix thoroughly and knead with your hand until smooth and elastic. or you can use spiral mixer, cake mixer for finer texture.

4. Rest for 10 minutes to allow dough to relax.

5. Form into a baston or long log. Cut into 30 grams or 40 grams depending upon you may wish. Fill each dough with sweetened red mongo or shredded coconut.

6. Arrange each dough in a greased baking tray.

7. Allow to rise dough until double in size.

10. Preheat oven to 250 degrees fahrenheit.

11. Once the thermometer of the oven reaches the temperatute., Place the dough inside the oven.

12. Open the oven door after 5 minutes to check dough if it’s done or golden brown.

13. Remove from oven if already golden brown.

14. Let it cool before putting it in a plastic to retain freshness.

Suggested filling

1. Sweetened mongo

a. Soak overnight about 1/2 kilo red mongo. The following day, cook the red mongo until soft.

Grind in a food processor. Put mongo in a wok. Add margarine or butter, 300 grams brown sugar, vegetable oil about 2 cups. and 10 to 20 grams vanilla.

b. Cheese

Slice into strips the cheese. This can be used as filling.

c. Sweetened coco

Cook in a wok shredded young cocunut 500 grams. Add the coconut water extracted from the coconut. Add tap water, 300 grams brown sugar or white sugar, vanilla 10 grams. Cook the coconut until water is drain.

Pork skin chicharon is popular among Filipinos as it can be appentizer among beer drinkers or even the young and old crave for it. It is eaten with a plate of vinegar. The pork skin is tenderized, dried and fried. Here I am giving you a tip on how to have a crispy chicharon. This is shared to me by a friend. All we need is pork skin and cooking oil and salt.

Here’s how -

1. Wash the pork skin thoroughly.

2. Fill the frying pan or wok with the pork skin side up. If you have ten slices of pork skin, you can stack it. Add vegetable oil enough to cover the pork skin.

3. Heat the frying pan to the point that you should not allow the oil to boil. Remember when the oil starts to boil,reduce heat. It would be easy if you use gas stove cause you can control the flame .You would notice that the pork skin will be tender in about 10 to 15 minutes.

4. Remove from pan. Slice pork skin into 1x 1 inch. Arrange in a tray.

5. Sundry 1 to 2 days until pork skin gets too hard to break.

6. If you are in a hurry, you can place it a preheated oven to let it dry until stiff or too hard.

7. Deep fry pork skin pieces. After frying coat with salt.

8. Then it done. You can eat it with vinegar or pack in plastic.

note: Pork skin can be bought in your local supermarket where they sell precut pork meat.

Of course we cannot deny that many of us are craving for a fried chicken in our everyday meal. That’s why we have several foodchains that are catering to our needs. They fry it differently ,with more spices put it to improve flavor and people keep on coming back for more. It seems we don’t get fed up. Here I will show you how to make fried chicken the simplest way with few ingredients only. To start with the we have to prepare the following ingredients”

1 whole young chicken cut into bite sizes

iodized salt and ground pepper

2 cups plain flour

Procedure

1. Rub the chicken pieces with iodized salt and pepper.

2. In a mixing bowl, mix plain flour with 1 tsp iodized salt and 1/2 tsp ground pepper.

3. Coat chicken one by one with the flour mixture. Put pressure on coating to allow flour to stick to the meat.

4. Pour oil about 2 cups of oil or enough to fry the chicken. Once it reaches the desired temperature sizzling hot, you can now fry. When it gets golden brown, you can remove each and place on the paper towel to allow oil to drain.

5, Serve chicken with gravy.

Gravy-

1. Melt 1/2 cup margarine. Boil 2tbsps evaporated Milk, add 1/2 cup chicken broth, 1tsp minced onion,2 tsps white sugar, 2tsps liquid seasoning. Thicken with 1/4 cup cornstarch. Note. cornstarch should be dissolved in a little water before it is finally added.

With a slice of loaf bread used for sandwitches carried in your bag for instant meal, you can just eat this loaf slice bread anytime. Here, I will show you how to bake a creamy loaf bread. For baking ingredients, you will need the following.

1 kg of first class flour or bread flour

10 grams instant yeast

5 grams bread improver

50 grams powdered or skim milk ( or buttermilk powder for better flavor)

60 grams vegetable shortening

175 grams white granulated sugar

16 grams iodized salt

100 grams egg or 2 pcs egg

10 grams vanilla

470 grams water

Procedure

1. Iin a mixing bowl, sift 3 times the first class flour, instant yeast, bread improver, powdered milk

2. In another bowl, beat the eggs until light and fluffy with a wire whip or electric mixer, add vanilla, iodized salt , vegetable shortening, water. Note: measure the liquid ingredients to come out with this weight

eggs – 100 grams

vanilla 10 grams

water 470 grams

total 480 grams

3. Dissolve sugar and salt in water.

4. Make a well in the center of the flour mixture. Add the liquid mixture, start mixing. Knead with your palm until dough becomes smoothe and elastic. If you have spiral mixer or a cake mixer, it would be easy for you to knead.

5. Rest for 5 to 10 minutes to allow dough to rest.

6. Divide dough into 400 grams each. Spread each dough on the floured table. Roll the dough with your fingers towards you, close sides, and placed on loaf tray already greased with vegetable shortening. Close the cover of the tray.

7. Let it rise until double, or you can see the risen dough touching the hole of the tray.

8. Preheat oven to 300 degrees fahrenheit.

9. Once it reaches the desired temperature, place the tray. Wait for 10 to 15 minutes before opening the door of the oven otherwise dough collapses once you open oven door after 2 to 5 minutes.

10. When dough turns golden brown, remove tray from oven. Open the cover of the tray, remove loaf bread.

Let it cool before slicing the bread using a bread nife or a bread slicer.

11. Pack the loaf bread with a plastic bag to preserve its freshness.

This is a filipino recipe where it is becoming favorite food on feast days, on special ocassions, and even on a day to day meal. My friend share this recipe for me and it’s tasty. Once you taste it, you will be asking for more. Here are the ingredient you will need:

1 kg beef sliced into cubes,

2 tbsps oyster sauce

2 pcs bay leaf

2 tsp minced garlic

3 tbsps white sugar

1-1/2 tsp ground pepper

4 tbsps atsuete oil

1/4 cup onion chopped

5 tbsps tomato paste

1/3 cup liver spread

1/3 cup chopped vienna sausage

1/4 cup butter,

2 pcs red bell pepper,

1/2 cup grated cheese

2 tbsps of olive oil

Procedure

1. On a casserole, place 1 kg of slice beef with worchestershire sauce, oyster sauce, bay leaf, minced garlic ,white sugar , ground pepper, enough water to boil until tender. You can boil meat on low fire or use pressure cooker if you want to tenderize meat fast.

2. On a frying pan, put atsuete oil. Fry white onions.

3.Add margarine, potatos, then cover the pan.

4. Place boiled beef.

5. In another pan, saute carrot,red bell pepper. Add olive oil, vienna sausage , cheese , then cover the pan.

6. Open the pan, place tomate paste, liver spread , beef stock. Allow to simmer. And it’s done!

1 kg of chicken chopped into 12 pcs

3 tsps liquid seasoning

3 tbsps soysauce

1 cup seven up

1/2 cup banana catsup

1/2 cup brown sugar

1 tsp of minced garlic

1-1/2 tsp ground pepper

1-1/2 fine salt

bamboo sticks

Procedure

1. In a mixing bowl, marinate chicken in soy sauce,banana catsup, brown sugar, seven up,minced garlic, ground pepper, salt, liquid seasoning at room temperature for 3 hours or overnight in the refrigerator for more flavor.

2. Boil the marinade without water until half done.

3. Place chicken on bamboo skewers or sticks.

4. Grill over charcoal flame until golden brown.

5. Brush marinade while grilling.

6. Serve with a cup of rice and picked papaya.

3. Make a well in the center of dough mixture in(1) , pour the liquid mixture.Mix with your hand, knead dough until smooth and elastic. You can use a spiral mixer or a dough roller(a 2 piece fabricated cylinder).

4. Rest for 5 minutes. Prepare a long log out of the dough and scale up 30 grams a piece.

5. Grease baking tray with vegetable shortening .

6. Start each piece of dough into a ball using the palm of your hand, press with your palm and arrange in the baking tray. Sprinkle sesame seeds on each bun.

7. Allow doug to rise until double. You can check if okay to bake by pressing or poking your finger on the dough.If it leaves a well or dent, This is now ready for baking.

8. Preheat oven to 250 degreees fahrenheit. Bake the dough and close oven. Wait for 5 to ten minutes until golden brown.

9. Remove buns from oven. Allow to cool. Pack or store if not ready to use.

In every household, the moment you think of breakfast treat of merienda time, it would be easy to think, oh I wanna make pancake! with a cup of coffee or tea while reading your daily newspapers, this is a perfect meal. Here, let me share a simple way to make pancake. What we need are the following

Bakery Ingredients

500 grams all purpose flour

25 grams baking powder

100 grams white granulated sugar

70 grams condensed milk or evaporated milk

10 grams iodized salt, rock or table salt

5 grams vanilla

50 grams melted butter or premium margarine( or any ordinary margarine will do)

2 eggs

corn syrup

For utensils, we need

whire whip or electric mixer

weighing scale that can read 2 grams to 1 kg( you can buy at supermarket or local hardware)

mixing bowl

wok or frying pan

gas or electric stove or simply charcoal stove

spatula

baking brush

Procedure

1. In a mixing bowl, mix all purpose flour, baking powder, white sugar. Sift three (3) times at a fair height to incorporate air into the mixture.

2.In a separate bowl, beat eggs with a wire whip or an electric mixer until light and fluffy. Add vanilla, melted butter,condensed milk, iodized salt. Continue mixing.

3. Pour the egg mixture to the flour mixture( 1), add water, mix with an electric mixer or wire whip until you have a watery mix. Just like when you scoop content with a spoon, batter falls without cut.

4. Prepare wok or frying pan. Preheat gas stove, brush with oil. Adjust flame to medium heat. Scoop batter with a cup and place on frying pan one at a time. Cover. When it turns brown, flip to the other side to get it done.

5. Serve on a plate topped with melted butter and corn syrup.

note: You can adjust sugar depending on your taste

It took me years to search, experiment again and again, so many mistakes, so many failures until I come up with this formula to make a delicious siopao. You wanna try this recipe. You can do it at home for your consumption and later on sell it to your neighborhood.

Of course you have to have the following:

1 kg of all purpose flour (for a whiter dough)

10 grams of instant yeast(any brand will do)

5 grams of dough improver(optional)

180 grams to 200 grams of white granulated sugar( you can adjust weight of sugar according to your taste)

15 grams iodized salt (rock salt of table salt will do)

450grams water

25 to 30 grams vegetable shortening

Procedure

1. In a clean basin, mix all purpose flour, instant yeast, dough improver .

2. In a separate container, add on water, granulated sugar, iodized salt. Be sure to mix properly until sugar and salt have melted.

3. Add vegetable shortening.

4. Make a well in the flour mixture, pour liquid mixture. Mix with your hands untill dough been thoroughly blended.

5.On top of your working table, Knead with your hands using your palm pressing the dough mixure until it becomes satiny or the dough is smooth and elastic just like when you blow a bubble gum. Or if you have a dough roller ( a piece of machine with 2 cylinders to press the dough) or a spiral mixer that can knead 1 to 8 kg of dough, or a 10qrt cake mixer where it has a hook intended to knead heavier dough.

6. Allow the dough to rest 5 to 10 minutes after kneading.

7. Put your table a small amount of vegetable shortening to rest your dough. Then place the dough mixture.

8. Cut dough into 50 grams to 60 grams depending upon the size of siopao you wish.

9. On your palm, get 1 each lay it flat with the center thicker than the sides, put your filling(be sure it is frozen) , press the filling with your thumb and close dough with your other hand. Put 2×2 inches wax paper on bottom portion of filled dough. Arrange in a tray.

10. When the dough has risen doubly, or by pressing your finger into the dough and it leaves a dent, you can now the steam the dough using a steamer.

11. Be sure the water you place in the steamer is about 1/3 of the contents of the steamer. It should be boiling hot to ensure that your siopoao is cookerd thoroughly.

12. Arrange your siopao dough with a piece of cloth( just like the one used to stack a sack of flour) or katsa.

Cover your steamer and cook your siopao for 10 to 15 minutes.

13. When cooked,remove from steamer and transfer to a siopao warmer or if not - you may eat now.!! You can check if it is cooked by pressing with your finger . If the dough bounced back, it is done.

Note: For your filling , you can use pork adobo, pork asado,

For your sauce, just use banana catsup or tomato catsup.

Note: you can freeze your siopao and just reheat when you feel like eating.

note: All inqredients are weighed in grams, so I would suggest you buy a weighting scale than can read 2 grams to 500 grams, and/or weighing scale that can read 1 to 10 kg.

Ingredients;

Garlic. red onion, 1/2 kg of chicken breast boiled, ginger,ground pepper, salt, cooked quail egg of hard boiled egg,chicken soup stock

1. In a separate casserole, mix 3 cups rice of good variety with 1 cup glutinous rice(malagkit) in water of 5 to 6 cups and cooked it until half-done.

2. In a separate frying pan, saute 1 clove of garlic until lightly brown, red onion until wilted, finely chopped ginger until brown and add on to the rice mixture.

3. Continue stirring, add salt, ground pepper, chicken soup stock. chicken fillet. Taste mixture according to your taste and also if rice already done.

4. Serve the arroz -caldo with leeks as garnishing on every cup served.

5. You can place cooked quail egg or hardboiled egg on top of cup served.
